The domainThe estate, created in 2012, is today made up of a dozen plots, covering around 5 ha. From the vine to bottling, everything is done to respect the natural qualities of the fruit and then of the wines.
The vines are grown organically, and I favor manual interventions:
pruning, disbudding, de-stemming, leaf stripping if necessary ...
Mechanical interventions are rare and are limited to tillage.
The cellar is located in the heart of Montpeyroux. The harvest is done by hand. The grapes are sorted on the plot then brought back in boxes to the cellar. They are then destemmed for traditional maceration, not destemmed for carbonic maceration and vatted by gravity.
Aging takes place in barrels of several wines or in vats.
The wines are neither fined nor filtered before bottling.
